Once you understand the game well and have a few games under your belt, the game gets boring if all you plan on doing is 100% optimal builds, with the same doomstack all over the map. People playing a single player campaign are the definition of casuals. I have 2000 hours into the game, and 99% of that has been VH/VH. So yeah it's *A* choice, but it's a really **** bag of choices only one of which is actually good (typically - sometimes both are ok). That or they're casuals and don't really care what they use. What you call a different play style is actually just people who haven't figured out the strengths and weaknesses of the units and are mostly just bopping around in the dark trying to figure out how to use their armies. What you're not understanding is that it's a noob-trap. Any right-thinking person could see this. Just because for the way you play one is not ideal, doesn't mean one is an inferior choice for another's playstyle.
